A man going camping asked me to sell him some salad. I said sure, and asked him how long he would be gone. “A month”, he said. Our salad keeps well, but I told him it’s doubtful it would last a month, especially camping. This was the beginning of Garden Salad Flakes. I took that man’s salad home, spread it out between two screens, laid it in the sun and waited. It doesn’t take long to dry things in our climate, and in a few days it was done. I crumbled it up, stuck it in a jar and took it to back to him. When I saw him again a month later, I asked him how the dried salad worked. “Wonderful”, he said smiling. “I sprinkled a little bit on every meal, and felt like I was getting the nutrition of a salad without having to make one every day. I never had to worry about it going bad, keeping it cold, or cleaning a bunch of leaves. But the main thing was, I never had to worry about throwing away anything. I ate every bit”.

Dehydration: Oldest Food Preservation Method

Since that day, eight years ago, we have learned a lot about dehydrated food. People have been drying food as a way to keep it since there were people on the earth. It’s the oldest and simplest way to preserve food. You lose almost none of the original nutrition. It can be kept for years without spoiling. Salad greens in particular are perfect for drying because of their high vitamin and mineral content. Not everyone feels like eating a big salad every day. Some people can’t stomach the high fiber content, aren’t around fresh greens, or simply don’t like salad. But everyone can sprinkle Garden Salad Flakes on their meal and get all of the benefits of a fresh salad without having to make one.

The first thing we did was call our laboratory to see what temperature would be best for drying, and we decided to settle on about 100 degrees Fahrenheit. Then, because there were no dehydrators on the market, we had to build our own big enough to dry several pounds of fresh salad at a time.

Next, we had to decide on the ingredients. We quickly found out that we could include several greens and herbs that are extremely healthy for you but you would never eat raw. Things like alfalfa, red clover, giant broccoli leaves, wheat and barley grass. In a dried form, you get all the benefits with none of the struggle to like it. Several of our customers asked us not to grind it into a powder, since there are several powders on the markets. So, we crumble the dried salad with our hands, screen out the large stems, and package it in a resealable Mylar bag.

 

In a small package of Salad Flakes, we put in one ounce, which is equal to one POUND of fresh salad. A serving size of Salad Flakes is about five grams, which is just about a tablespoon per day. This would be a success story anywhere. However, we decided not to stop there. Hearing about a new procedure that tests food for their antioxidant power called The ORAC test, we sent a small amount to a lab in Massachusetts. Antioxidant capacity, they told us, is more than just vitamins. It’s a combination of everything contained in the food. And they “ score “ each food; so that when you buy fruits or vegetables you know which ones have the highest amount of antioxidants in them.

Prunes score the highest with 240 ORAC units per five grams. Raisins are next with 120 ORAC units per five grams. Kale is the highest vegetable scored with 65 ORAC units per five grams.

Our Garden Salad Flakes came out with an amazing score of 2450 ORAC units per five gram serving. That’s right, two thousand four hundred and fifty. The antioxidant capacity is off the charts. Can you just imagine the nutritional benefits of taking just one tablespoon a day?

WHAT IS ORAC?

ORAC is short for Oxygen Radical Absorbance Capacity, which is simply a measure of how well a particular food absorbs free radicals. It is more than just vitamins; it is a combined, all encompassing picture of the food. It is its Antioxidant Power.

Each food is given a score in ORAC units. Spinach, for example, has an ORAC score of about 63 units per 5 gram serving. Blueberries have about 120 units per 5 grams.
